These fill the house with fabulous Christmas baking smells but are so easy to make. Gluten & dairy free. Makes 10-12.


50g Coconut oil (melted but cool)
35g coconut sugar or good quality brown muscovado
2tbs molasses or black treacle
1 egg
1tsp vanilla extract
30g coconut flour
120g almond flour (I used ground almonds)
1/2 tsp baking soda
3/4 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp ground allspice
1/4 tsp salt


Oven to 175C
Line a baking sheet with baking parchment
Mix all dry ingredients in a large bowl.
Whisk the egg into molasses & vanilla then mix into dry ingredients adding oil at the end.
Leave to rest for 1/2 hour for coconut flour to re-hydrate & dough to firm up.
Take a dessertspoon & form balls gently in your fingertips. Place/space onto sheet & flatten slightly.
Bake for 11-13 mins then leave to cool on the tray for 10-15 mins before removing to wire rack to cool thoroughly
Store in airtight container, if you must!!
