A really simple recipe that is tasty, healthy & vegan.

Served with fabulous kale or spinach (steamed with a chopped chilli, crushed garlic clove & good olive oil added afterwards, this will get the taste buds zingy. For families or personal preference, adapt the seasoning to taste.

Makes 8 burgers – serving 4

1tbs Olive Oil

1 small onion, peeled & chopped

2 cloves garlic, peeled & chopped (plus one for the kale!)

1/4 – 1/2 tsp Cayenne Pepper or Chilli Powder

400g can Beans of choice or cooked lentils, drained really well

1tsp Ground Cumin

1/2 tsp Ground Turmeric

1 tsp Ground Garam Masala

1tbs Fresh Coriander , chopped

Salt & Pepper

Heat the oil and cook the onion, garlic and chilli until softened (about 5-10 mins). Watch it doesn’t burn.

Mash the beans well and mix in the dried spices & coriander.

Season well.

Shape into burgers & pop into the fridge for at least 1 hour.

Grill, fry or bake until crisp on the outside & slightly browned. Turn with extra care as they can be quite delicate.

Serve with steamed spinach, kale or broccoli with added oil, garlic & chilli
