Vegan – Gluten, dairy, fruit & Refined Sugar Free


180g   Gluten Free Oats

40-50g Mixed Nuts, chopped (such as almonds, hazelnuts, walnuts, Brazil, pecans)

30g     Maple, rice, date or coconut syrup (runny honey = not vgean)

45g      Good Oil (rapeseed or melted coconut)

15-25g Mixed Seeds (sunflower, pumpkin, flax, chia)

2tsp     Ground Cinnamon (optional could use ground ginger, turmeric, cardamon?)

pinch    Finely Ground Seasalt


Mix all the dry ingredients together in a large bowl.

Mix in 30g of the oil & the syrup.

Splash approx 1-2tbs (25-50ml) water over the mix & mix again, thoroughly.

It should start clumping together! You do not want it soggy so add water gradually!

Allow to rest for 20-30mins whilst the oven heats up.

Pour the mix onto a baking sheet & spread evenly.

Drizzle the remaining oil over the mix.

Bake at 180C for 20mins. Take out of the oven & turn the granola around on the tray so the outside bits end up in the middle of the tray or they WILL BURN!!!

Return the tray to the oven for another 10-15mins nut keep checking it! Times will vary!

When the whole of the mix is just taking on a golden colour, remove from the oven & put the tray onto a cooling rack.

DO NOT COVER or it will steam itself soggy again!!

Allow to cool completely beofre putting into an airtight container.

Use within 2 weeks

Serving suggestions:

You could add to yoghurt or make a layered dessert with some fresh/pureed fruits.

Top with fresh fruit of your choice & a dollop of yoghurt or ‘cream’

Make into a crumble by topping warm, cooked fruit with the granola & serving with custard or ice cream.

Mix in ground flax seeds or flaked almonds to increase protein & good fats.

Make it a bit naughty by adding a small amount of dark choc chips before you eat!

Vary the nuts, seeds, spices to tailor to your own tastes & ring in the changes. My personal favourite is maple & pecan with a hint of ginger to bring out the flavours!!

You could use fresh fruit juice instead of water but this adds sugar!
